You have established the culture, you should be proud. When pushed with a floured finger about 1cm into the dough it should spring back very slowly but decisively and leave a little indentation. I've baking bread for a number of years, but I've only just started baking with a sourdough starter - this is due to getting the excellent River Cottage Bread handbook, which has given me the confidence to make a sourdough starter.

Get rid of excess flour on the work bench.
